- 1 medium Red Bell Pepper (diced)
- 1 small Red Onion (finely chopped)
- 1 cup Cherry Tomatoes (halved)
- 1 medium Avocado (diced)
- 1/4 cup Cilantro (chopped)
- 1 cup Cheddar Cheese (shredded)
- Salt, to taste
- Pepper, to taste
Dressing Ingredients
- 1/2 cup Mayonnaise
- 1/2 cup Sour Cream
- 2 tablespoons Lime Juice (freshly squeezed)
- 1 clove Garlic (minced)
- 1 teaspoon Onion Powder
- 1 teaspoon Smoked Paprika
- 1-2 pieces Chipotle Peppers in Adobo (adjust to spice preference)
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente, approximately 8-10 minutes. Drain and rinse the pasta with cold water to stop cooking and cool it down.
- Combine salad ingredients: In a large mixing bowl, add the cooled pasta, black beans, corn, diced red bell pepper, chopped red onion, cherry tomatoes, diced avocado, chopped cilantro, and shredded cheddar cheese. Gently stir to combine all ingredients evenly without mashing the avocado.
- Prepare the dressing: In a separate bowl, whisk together mayonnaise, sour cream, fresh lime juice, minced garlic, onion powder, smoked paprika, and finely chopped chipotle peppers in adobo until the dressing is smooth and creamy. Season with salt and pepper to taste.
- Toss the salad: Pour the chipotle ranch dressing over the pasta salad mixture. Toss gently and thoroughly to coat all ingredients evenly with the dressing.
- Adjust seasoning: Taste the salad and add additional salt and pepper if needed to balance the flavors.
- Chill: Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld together and serve chilled.

- Dairy-free cheese and vegan mayo can be used for vegan adaptations.
- Greek yogurt can substitute sour cream for a healthier option.
- Adjust the amount of chipotle peppers to your heat tolerance.
