Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the quartered red potatoes with olive oil, garlic powder, rosemary, salt, and black pepper.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper or lightly greased.
- Roast in the preheated oven for 35-40 minutes, turning once halfway through, until golden brown and crispy on the outside.
- Remove from oven and let cool slightly. Garnish with chopped parsley if desired.
