- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup whole milk
- Yellow food coloring (as needed for desired color)
Buttercream Frosting
- 4 cups buttercream frosting (prepared with softened butter and powdered sugar)
- 1 cup heavy cream
- Additional vanilla extract (for frosting)
- Yellow food coloring (as desired)
Chocolate Ganache
- 1 cup heavy cream
- 8 oz semi-sweet chocolate, chopped
Decoration
- Peeps marshmallow chicks (as many as desired for decoration)
- Edible sunflower petals (for garnish)
Instructions
- Preheat and prepare pans: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans to prevent sticking during baking.
- Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
- Cream butter and sugar: In a large mixing bowl, cream the softened butter with granulated sugar until the mixture is light and fluffy, which helps create a tender crumb.
- Add eggs and vanilla: Incorporate the eggs one at a time into the creamed butter mixture, mixing well after each addition. Stir in the vanilla extract for flavor.
- Combine wet and dry ingredients: Gradually add the dry flour mixture to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined to avoid overmixing.
- Add color: Incorporate yellow food coloring to the batter until the desired shade is achieved, creating a vibrant sunflower hue.
- Bake the cake layers: Divide the batter evenly among the three prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cakes: Let the baked cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely before frosting.
- Prepare buttercream frosting: Beat softened butter until creamy. Gradually add powdered sugar while mixing on low speed. Then add heavy cream and vanilla extract, and beat on high speed until the frosting is fluffy and smooth. Add yellow food coloring as desired for a bright, matching color.
- Assemble the cake: Place one cake layer on a serving plate and spread a layer of buttercream frosting over the top. Repeat with the second layer and frost the top and sides of the entire cake with the remaining buttercream.
- Make the chocolate ganache: Heat the heavy cream until just boiling, then pour it over the chopped semi-sweet chocolate. Let it sit for a few minutes, then stir until smooth and glossy.
- Decorate the cake: Pour the chocolate ganache over the top of the assembled cake, allowing it to gently drip down the sides. Garnish the cake with Peeps marshmallow chicks on top and sprinkle edible sunflower petals around the cake for a festive finish.
Notes
- Ensure cake layers are completely cool before frosting to prevent melting.
- You can prepare the buttercream frosting a day ahead and refrigerate it; bring to room temperature before using.
- Adjust yellow food coloring to your preferred shade for a more natural or vibrant sunflower look.
- Ganache can be made slightly thicker or thinner by adjusting the cream quantity.
- Use edible sunflower petals to keep the decorations safe to eat and visually appealing.
