Description

  • 1 lb chicken breasts, about 2 large breasts
  • 1/2 cup Greek dressing

Rice

  • 2 bags Success Boil-in-Bag White Rice, or 2 heaping cups of cooked white rice

Vegetables and Legumes

  • 1 (15.5 oz) can chickpeas, drained and rinsed
  • 1 large cucumber, chopped
  • 1 cup quartered grape tomatoes
  • 1/4 cup sliced red onion

Dressings and Cheese

  • 1/2 cup crumbled feta cheese
  • 1/4 cup tzatziki
  • 1/4 cup hummus


Instructions

  1. Marinate the chicken: Place the chicken breasts in a bowl and pour the Greek dressing over them. Ensure both sides of the chicken breasts are well coated with the dressing. Cover and refrigerate for at least 1 hour to allow the flavors to infuse.
  2. Prepare rice: Cook the Success Boil-in-Bag White Rice according to the package instructions, or cook approximately 2 heaping cups of white rice until fluffy. Set aside and keep warm.
  3. Cook the chicken: Preheat your air fryer to 400°F (200°C). Place the marinated chicken breasts in the air fryer basket and cook for 12-15 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C). Alternatively, bake the chicken in a preheated oven at 400°F (200°C) for about 20 minutes until fully cooked.
  4. Assemble bowls: Divide the cooked rice evenly into 4 serving bowls. Slice or chop the cooked chicken breasts and place them on top of the rice. Add chickpeas, chopped cucumber, quartered grape tomatoes, sliced red onion, hummus, tzatziki, and crumbled feta cheese to each bowl. Drizzle extra Greek dressing over the top if desired.
