Instructions
- Cook Chicken: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season 2 pounds of bite-sized chicken breast pieces with salt and black pepper to taste. Cook the chicken pieces until they are golden brown and fully cooked through, about 8 minutes. Remove the chicken from the skillet and set aside.
- Make Sauce: In a bowl, whisk together ¼ cup honey, 2 tablespoons low-sodium soy sauce, 1 tablespoon rice vinegar, 1 teaspoon onion powder, and ½ teaspoon red pepper flakes until well combined.
- Cook Garlic and Thicken Sauce: Reduce the heat of the same skillet to medium and add 3 cloves of minced garlic. Cook the garlic until fragrant, approximately 1 minute. Pour the honey mixture into the skillet and bring it to a simmer. In a small bowl, mix 1 tablespoon cornstarch with 2 tablespoons water to create a slurry. Pour the slurry into the skillet, stirring continuously until the sauce thickens, about 2 minutes.
- Glaze Chicken: Return the cooked chicken to the skillet and toss to coat all pieces evenly with the thickened honey garlic sauce. Cook for another 2 minutes until the chicken is heated through and well glazed.
