Ingredients
Scale
Peach Filling
- 4 cups fresh peaches, peeled and sliced (or 2 cans of peaches in light syrup, drained)
- 1/4 cup granulated sugar (or coconut sugar)
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon cornstarch (optional, for thickening)
Biscuit Topping
- 1 cup gluten-free all-purpose flour (make sure it contains xanthan gum)
- 1/4 cup coconut sugar (or regular sugar)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup cold unsalted butter, cubed
- 1/4 cup unsweetened almond milk (or any milk of choice)
- 1/2 teaspoon vanilla extract
Instructions
- Preheat Oven and Prepare Dish: Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish (or a similar-sized casserole dish) with butter or cooking spray to prevent sticking.
- Mix Peach Filling: In a medium bowl, combine the sliced peaches, sugar, lemon juice, cinnamon, nutmeg, and optional cornstarch. Toss everything until the peaches are well coated and then pour this mixture into the prepared baking dish.
- Combine Dry Topping Ingredients: In a separate bowl, whisk together the gluten-free flour, coconut sugar, baking powder, and salt to evenly distribute the leavening and flavors.
- Cut in Butter: Add the cubed cold butter to the flour mixture. Using a pastry cutter or your fingers, incorporate the butter into the dry ingredients until the mixture has a coarse crumb consistency.
- Add Wet Ingredients: Stir in the almond milk and vanilla extract just until combined. The resulting dough should be thick but spoonable, not overly wet.
- Assemble Cobbler: Spoon dollops of the biscuit dough evenly over the peach filling, leaving some of the peaches visible to allow steam to escape and create a nice texture contrast.
- Bake: Bake the cobbler for 30-35 minutes, or until the biscuit topping turns golden brown and the peach filling is bubbling, signifying it’s fully cooked.
- Cool and Serve: Allow the cobbler to cool slightly before serving. It pairs wonderfully with vanilla ice cream or whipped cream for extra indulgence.
Notes
- Using fresh peaches will provide the best flavor, but canned peaches work well too if drained properly.
- The cornstarch is optional but helps thicken the peach filling to prevent it from becoming too runny.
- Ensure your gluten-free flour blend contains xanthan gum for the best texture; if it does not, add 1/4 teaspoon xanthan gum separately.
- Cold butter is key to achieving a flaky, biscuit-like topping—do not soften the butter before mixing.
- Letting the cobbler cool for a few minutes helps the filling set and makes serving easier.
