Creamy Parmesan Pasta
- 8 oz (225 g) fettuccine or spaghetti
- 1 tbsp unsalted butter
- 2 garlic cloves, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/4 tsp ground nutmeg (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- Prepare the Steak Bites: Heat olive oil in a skillet over medium-high heat.
- Sear the Steak: Add the sirloin cubes seasoned with salt, pepper, and smoked paprika if using. Sear for 2-3 minutes per side until golden brown. Remove from skillet and set aside.
- Make the Garlic Butter: Stir in the minced garlic into the same skillet and sauté for 1 minute. Add the unsalted butter and let it melt. Return the steak bites to the skillet, tossing them in the garlic butter to coat well, then remove from heat.
- Make the Parmesan Sauce: In the same skillet, add 1 tbsp unsalted butter and minced garlic, sautéing for 1 minute until fragrant. Stir in the heavy cream and bring it to a gentle simmer. Gradually whisk in the freshly grated Parmesan cheese until the sauce is smooth and creamy. Season with ground nutmeg, salt, and pepper to taste.
- Combine: Add the cooked pasta to the sauce, stirring to coat evenly. Gradually stir in the reserved pasta water if the sauce needs loosening to achieve a silky consistency.
- Serve: Plate the creamy Parmesan pasta and top with the garlic butter steak bites. Garnish with freshly chopped parsley and serve immediately while hot.
