Instructions

  2. Deglaze the Pan: Pour in the dry white wine or sherry. Scrape the bottom of the pan with a spatula to lift any browned bits. Let the liquid reduce slightly to concentrate the flavors.
  3. Add Broth and Herbs: Add the beef or vegetable broth along with the fresh thyme sprigs into the pan. Season with salt and freshly ground black pepper. Simmer the soup gently for 20 to 30 minutes, allowing the flavors to meld together.
  4. Prepare the Bread and Cheese: Slice the baguette into rounds and toast them in an oven or toaster until crisp. Grate the Gruyère cheese and set aside.
