Instructions
- Prepare the Steak: Cut the sirloin steak into thin strips. Season the beef evenly with salt and pepper to enhance the flavor before cooking.
- Caramelize the Onions: In a large skillet, melt the butter over medium heat. Add the thinly sliced sweet onions and cook for about 10 minutes, stirring occasionally to prevent sticking and ensure even cooking.
- Add Vinegar and Sugar: Stir in the balsamic vinegar and sugar with the onions. Continue cooking for an additional 5 to 10 minutes until the onions are deeply caramelized and richly flavored.
- Sear the Steak: Push the caramelized onions to the side of the skillet. Add the steak strips to the empty side and cook for 3 to 5 minutes, turning occasionally, until the beef is browned on all sides.
- Simmer with Vegetables: Pour in the beef broth. Add the thinly sliced red potatoes and quartered Brussels sprouts to the skillet. Stir everything together, then cover the skillet and cook for 10 to 15 minutes, stirring occasionally, until the vegetables are tender and cooked through.
- Melt the Cheese & Serve: Sprinkle the shredded Gruyère cheese evenly over the top of the mixture. Cover the skillet and let it sit for about 1 minute to allow the cheese to melt. Serve immediately while hot and cheesy.
