Ingredients
Scale
Chicken and Seasoning
- 2 pounds boneless, skinless chicken breasts, cut into small cubes
- 3 tablespoons low sodium taco seasoning
- 1/2 cup water
- Salt and pepper, to taste
Salad Base and Toppings
- Romaine lettuce, freshly chopped (approximately 6 cups)
- Cooked corn (about 1 cup)
- Sliced cherry tomatoes (1 cup)
- Shredded cheddar cheese (1 cup)
- Sliced green onion (1/2 cup)
- Freshly chopped cilantro (1/4 cup)
Additional Ingredients
- 1 bag Doritos Nacho Cheese Chips (approx. 9.75 oz)
- 1 bottle Ranch Dressing (approx. 12 oz) or 1 bottle Catalina Dressing (approx. 12 oz)
Instructions
- Prepare the Chicken: Heat a large non-stick skillet over medium-high heat and spray it with cooking spray. Add the cubed chicken to the skillet, seasoning it with salt and pepper to taste. Cook the chicken, stirring occasionally, for about 10 minutes or until it is cooked through and no longer pink in the center.
- Season and Simmer: Sprinkle the cooked chicken with low sodium taco seasoning, then pour 1/2 cup of water over the mixture. Stir and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer uncovered for 5 to 8 minutes until the flavors meld and most of the liquid has evaporated.
- Assemble the Salad: On individual plates or a large serving bowl, arrange a bed of freshly chopped romaine lettuce. Top the lettuce with cooked corn, sliced cherry tomatoes, shredded cheddar cheese, green onions, and chopped cilantro according to your preference.
- Add the Chicken and Chips: Spoon the taco-seasoned chicken evenly over the salad beds. Crush Doritos Nacho Cheese Chips and sprinkle over the top for a crunchy texture and cheesy flavor.
- Dress and Serve: Drizzle your choice of ranch or Catalina dressing over each salad. Serve immediately to enjoy the combination of warm chicken and fresh, crisp salad with crunchy chips.
Notes
- For a spicier kick, consider adding sliced jalapeños or a dash of hot sauce.
- You can substitute the chicken breasts with boneless, skinless thighs for a juicier texture.
- Use gluten-free Doritos if serving guests with gluten sensitivities.
- Leftover seasoned chicken can be refrigerated and used within 2 days for meal prep.
- To make the salad vegetarian, omit the chicken and add beans or grilled vegetables instead.
