- 2 pounds ground beef
- 1 cup breadcrumbs
- 2 large eggs
- 1/2 cup milk
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 cup ketchup (plus more for topping)
- 2 tablespoons brown sugar (for glaze)
- 1 tablespoon mustard (for glaze)
Instructions
- In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire sauce, salt, pepper, thyme, and 1/2 cup ketchup. Mix just until combined—do not overmix.
- Form the mixture into a loaf shape and place it in the bottom of a lined or greased slow cooker.
- In a small bowl, mix together additional ketchup, brown sugar, and mustard. Spread over the top of the meatloaf.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the internal temperature reaches 160°F (71°C).
- Optional: Place under a broiler for 2–3 minutes to caramelize the glaze before serving.
- Let rest for 10 minutes before slicing. Serve with mashed potatoes or your favorite sides.
Notes
- Use a slow cooker liner or foil sling for easy removal.
- Mix meatloaf gently to avoid a dense texture.
- Ground turkey or a beef/pork mix can be used instead of all beef.
