Ingredients

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup ketchup (plus more for topping)
  • 2 tablespoons brown sugar (for glaze)
  • 1 tablespoon mustard (for glaze)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire sauce, salt, pepper, thyme, and 1/2 cup ketchup. Mix just until combined—do not overmix.
  2. Form the mixture into a loaf shape and place it in the bottom of a lined or greased slow cooker.
  3. In a small bowl, mix together additional ketchup, brown sugar, and mustard. Spread over the top of the meatloaf.
  4. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the internal temperature reaches 160°F (71°C).
  5. Optional: Place under a broiler for 2–3 minutes to caramelize the glaze before serving.
  6. Let rest for 10 minutes before slicing. Serve with mashed potatoes or your favorite sides.

Notes

  • Use a slow cooker liner or foil sling for easy removal.
  • Mix meatloaf gently to avoid a dense texture.
  • Ground turkey or a beef/pork mix can be used instead of all beef.
