Description

Crispy, golden corn nuggets made from a simple batter of flour, milk, butter, and sweet corn, deep-fried to perfection. These nuggets are perfect as a snack or appetizer and pair wonderfully with barbecue or Alabama white sauce.

  • 1 large egg
  • 1 (12-oz) package frozen yellow corn, thawed and drained (about 2â…“ cups)

Instructions

  1. Heat the oil: Heat canola oil in a deep pot to 350°F and prepare a wire rack over a baking sheet for draining the fried nuggets.
  2. Mix dry ingredients: In a bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and kosher salt until well combined.
  3. Mix wet ingredients: In a separate bowl, combine the whole milk, melted salted butter, and egg, mixing well to incorporate.
  4. Combine batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Then gently fold in the thawed and drained yellow corn, being careful not to overmix.
  5. Fry the nuggets: Using a spoon, drop spoonfuls of the batter into the hot oil in small batches. Fry for about 4 to 5 minutes, turning occasionally until the nuggets are golden brown and crispy.
  6. Drain and season: Transfer the fried corn nuggets to the prepared wire rack to drain excess oil. Sprinkle with additional kosher salt immediately while still hot.
