For the Nuggets
- Canola oil, for frying
- 1 cup all-purpose flour
- 2 tsp granulated sugar
- 1 tsp baking powder
- 1 tsp kosher salt, plus more for sprinkling
- ½ cup whole milk
- 2 Tbsp salted butter, melted
- 1 large egg
- 1 (12-oz) package frozen yellow corn, thawed and drained (about 2â…“ cups)

Instructions
- Heat the oil: Heat canola oil in a deep pot to 350°F and prepare a wire rack over a baking sheet for draining the fried nuggets.
- Mix dry ingredients: In a bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and kosher salt until well combined.
- Mix wet ingredients: In a separate bowl, combine the whole milk, melted salted butter, and egg, mixing well to incorporate.
- Combine batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Then gently fold in the thawed and drained yellow corn, being careful not to overmix.
- Fry the nuggets: Using a spoon, drop spoonfuls of the batter into the hot oil in small batches. Fry for about 4 to 5 minutes, turning occasionally until the nuggets are golden brown and crispy.
- Drain and season: Transfer the fried corn nuggets to the prepared wire rack to drain excess oil. Sprinkle with additional kosher salt immediately while still hot.
- Serve: Repeat the frying process with remaining batter. Serve the hot corn nuggets warm, accompanied by barbecue sauce or Alabama white sauce if desired.
