Description

Creamy Dill Pickle Soup, also known as Zupa Ogorkowa, is a comforting Polish-inspired soup featuring tender vegetables and tangy dill pickles blended into a rich sour cream base. It’s a flavorful, hearty dish perfect for warming up on cooler days.

Ingredients

Scale

Soup Base

  • 4 cups chicken broth
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup diced celery

Add-ins

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup chopped dill pickles

Finishing Touches

  • 1 cup sour cream
  • 1 tablespoon fresh dill
  • Salt and pepper to taste

Instructions

  1. Combine Ingredients: In a large pot, add the chicken broth, diced potatoes, carrots, and celery, combining them thoroughly.
  2. Boil and Cook Vegetables: Bring the mixture to a boil over medium-high heat, then reduce to a simmer and cook until the vegetables are tender, approximately 20 minutes.
  3. Add Aromatics and Pickles: Stir in the diced onions, minced garlic, and chopped dill pickles. Simmer everything together for an additional 5 minutes to allow flavors to meld.
  4. Add Sour Cream and Dill: Remove the pot from heat, then stir in the sour cream and fresh dill until fully incorporated, creating a creamy texture.
  5. Season and Serve: Season the soup with salt and pepper to taste. Serve the soup hot for the best flavor experience.

Notes

  • Use fresh dill for the best aromatic flavor, but dried dill can be used in a pinch (reduce quantity accordingly).
  • For a vegetarian version, substitute chicken broth with vegetable broth.
  • If you prefer a thicker soup, mash some of the cooked potatoes before adding the sour cream.
  • Adjust the amount of dill pickles based on your preferred level of tanginess.
  • Serve with crusty bread to complement the creamy texture of the soup.
