Instructions
- Heat the oil: Heat 2 tablespoons of vegetable oil in a large pan or skillet over medium heat until shimmering and hot.
- Cook the chicken: Add the diced chicken breast to the pan and cook them, stirring occasionally, until browned and cooked through, about 4-5 minutes.
- Scramble the eggs: Push the cooked chicken to one side of the pan. Crack the two eggs into the other side and scramble them gently until fully cooked.
- Add vegetables and rice: Add the mixed vegetables and 2 cups of cooked rice into the pan with the chicken and scrambled eggs, stirring to combine all the ingredients evenly.
- Season the rice: Pour 3 tablespoons of soy sauce evenly over the rice mixture. Stir well to coat everything thoroughly and enhance the flavor.
- Finish with green onions and salt: Add the sliced green onions and season the mixture with salt to taste. Stir everything together to combine.
- Final cooking: Cook the fried rice for an additional 2-3 minutes, stirring occasionally to let the flavors meld and the rice heat through completely. Serve hot.
