- 2 tbsp homemade taco seasoning (or store-bought)
- 8 oz Mexican cheese blend, divided

Instructions
- Cook the Rice: In a large nonstick skillet, combine the rice, chicken broth, and diced tomatoes with green chiles including their juices to build the flavorful base of the dish.
- Bring to Boil: Heat the mixture over high heat until it reaches a rolling boil.
- Add Chicken & Veggies: Stir in the bite-sized chicken pieces, black beans, frozen sweet corn, and taco seasoning evenly throughout the skillet.
- Simmer Covered: Reduce heat to medium-low, cover the skillet and let everything simmer gently for 15 to 20 minutes, stirring halfway through, until the rice is tender and chicken is cooked through.
- Melt the Cheese: Remove the skillet from heat. Stir in half of the shredded Mexican cheese blend, then sprinkle the remaining cheese evenly on top.
- Let Cheese Melt: Cover the skillet again and allow it to sit for 5 minutes so the cheese melts thoroughly and blends with the ingredients.
- Serve: Spoon the cheesy chicken burrito skillet onto plates and garnish with optional chopped cilantro, green onions, and diced avocado for added freshness and flavor.
