Cheesecake Rice Krispies Treats are a fun twist on the classic snack, combining creamy cheesecake flavor with the crispy texture of Rice Krispies for a delightful no-bake dessert.

- 3 tbsp unsalted butter
- 1 (10 oz) bag mini marshmallows
- 1 (3.4 oz) package instant cheesecake pudding mix
- 6 cups Rice Krispies cereal
- 1 cup white chocolate chips (optional, for drizzle)
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- Grease a 9×13-inch baking dish with butter or nonstick spray.
- In a large saucepan over medium heat, melt the butter.
- Add mini marshmallows, stirring until completely melted and smooth.
- Stir in the instant cheesecake pudding mix, vanilla extract, and salt until well combined.
- Remove from heat and immediately mix in the Rice Krispies cereal until fully coated.
- Press the mixture evenly into the prepared baking dish using a spatula or wax paper.
- If desired, melt white chocolate chips and drizzle over the top.
- Let cool at room temperature for at least 30 minutes before cutting into squares and serving.
Notes
- For extra cheesecake flavor, you can add crushed graham crackers on top.
- Store in an airtight container at room temperature for up to 3 days.
- Don’t press too hard when forming the treats or they may become too dense.
