Crust

Instructions
- Prepare Crust: Preheat the oven to 350°F. Let the sugar cookie dough sit at room temperature for about 15 minutes to soften slightly. Press the softened dough evenly into a 9-inch deep dish pie pan.
- Add Toffee Bits and Bake: Evenly press 1/2 cup of toffee bits onto the cookie dough crust. Bake for 16 to 18 minutes until the crust turns golden brown. Remove from oven and allow the crust to cool completely.
- Make Cream Cheese Mixture: In a large mixing bowl, beat the softened cream cheese using an electric hand mixer. Add 1/2 cup caramel sauce and continue beating until thoroughly combined.
- Whip Cream: In a separate medium bowl, beat heavy whipping cream with an electric mixer while gradually adding granulated sugar. Beat until soft peaks form. Divide the whipped cream into two equal parts.
- Combine Mixtures: Fold one half of the whipped cream gently into the cream cheese and caramel mixture to create a smooth filling.
- Assemble Pie: Pour the cream cheese mixture evenly into the cooled sugar cookie crust. Spread the remaining half of whipped cream over the top of the pie.
- Garnish and Chill: Sprinkle the remaining 1/4 cup of toffee bits on the whipped cream topping. Drizzle the remaining caramel sauce over the pie. Refrigerate the pie for at least 3 hours to chill before serving. Enjoy!
