Ingredients
Scale
Vegetables
- 4 medium size zucchini
Protein & Dairy
- 1 lb ground chicken
- 2 cups shredded mozzarella cheese
Seasonings & Sauces
- 1/2 cup buffalo wing sauce
- 1/2 packet ranch seasoning (about 2 tbsp)
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the zucchini boats.
- Prepare Zucchini: Cut each zucchini lengthwise in half. Scoop out the seeds and pulp to create hollow ‘boats’. Place the zucchini halves cut-side up in a greased 9×13 inch baking dish.
- Cook Chicken: In a skillet over medium heat, cook the ground chicken until it is fully cooked and no longer pink, breaking it apart as it cooks.
- Mix Sauce and Seasoning: Once the chicken is cooked, stir in the buffalo wing sauce and ranch seasoning until the meat is evenly coated.
- Fill Zucchini Boats: Spoon the buffalo chicken mixture evenly into the hollowed zucchini halves.
- Top with Cheese: Generously sprinkle shredded mozzarella cheese on top of each stuffed zucchini half.
- Bake Covered: Cover the baking dish with aluminum foil and bake in the oven for 30 minutes to allow the zucchini to soften and the flavors to meld.
- Uncover and Finish Baking: Remove the foil and bake for an additional 5 minutes to melt and lightly brown the cheese.
- Serve: Serve warm, optionally with ranch dressing on the side for dipping or drizzling. Enjoy your flavorful Buffalo Chicken Zucchini Boats!
Notes
- For spicier boats, add extra buffalo wing sauce or a dash of cayenne pepper.
- Make sure not to scoop out too much zucchini flesh so the boats remain sturdy.
- These zucchini boats can also be prepared ahead and baked just before serving.
- Leftovers keep well refrigerated for up to 3 days and can be reheated in the oven or microwave.
