Description

These Buffalo Chicken Zucchini Boats are a delicious, low-carb appetizer or meal option featuring tender zucchini halves filled with spicy buffalo chicken and topped with melted mozzarella cheese. Baked to perfection, they make a flavorful and satisfying dish perfect for game day or a weeknight dinner.

Ingredients

Scale

Vegetables

  • 4 medium size zucchini

Protein & Dairy

  • 1 lb ground chicken
  • 2 cups shredded mozzarella cheese

Seasonings & Sauces

  • 1/2 cup buffalo wing sauce
  • 1/2 packet ranch seasoning (about 2 tbsp)

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the zucchini boats.
  2. Prepare Zucchini: Cut each zucchini lengthwise in half. Scoop out the seeds and pulp to create hollow ‘boats’. Place the zucchini halves cut-side up in a greased 9×13 inch baking dish.
  3. Cook Chicken: In a skillet over medium heat, cook the ground chicken until it is fully cooked and no longer pink, breaking it apart as it cooks.
  4. Mix Sauce and Seasoning: Once the chicken is cooked, stir in the buffalo wing sauce and ranch seasoning until the meat is evenly coated.
  5. Fill Zucchini Boats: Spoon the buffalo chicken mixture evenly into the hollowed zucchini halves.
  6. Top with Cheese: Generously sprinkle shredded mozzarella cheese on top of each stuffed zucchini half.
  7. Bake Covered: Cover the baking dish with aluminum foil and bake in the oven for 30 minutes to allow the zucchini to soften and the flavors to meld.
  8. Uncover and Finish Baking: Remove the foil and bake for an additional 5 minutes to melt and lightly brown the cheese.
  9. Serve: Serve warm, optionally with ranch dressing on the side for dipping or drizzling. Enjoy your flavorful Buffalo Chicken Zucchini Boats!

Notes

  • For spicier boats, add extra buffalo wing sauce or a dash of cayenne pepper.
  • Make sure not to scoop out too much zucchini flesh so the boats remain sturdy.
  • These zucchini boats can also be prepared ahead and baked just before serving.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated in the oven or microwave.
