Instructions

  1. Preheat and prepare. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix dry ingredients. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and sugar.
  3. Cut in butter. Add the cold diced unsalted butter to the dry ingredients. Using a pastry cutter or your fingertips, rub the butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces of butter remaining.
  4. Add wet ingredients. In a separate small bowl, whisk together the cold heavy cream (or buttermilk), egg, and vanilla extract if using. Pour this mixture over the dry ingredients and stir gently until just combined, avoiding overmixing which can toughen the scones.
