- 1 can (20 ounces) crushed pineapple in juice (undrained)
- 1 cup mini marshmallows
- 1/2 cup chopped pecans
- 1 1/2 cups whipped topping (like Cool Whip)

Instructions
- Combine pudding and pineapple: In a large mixing bowl, blend the instant pistachio pudding mix with the entire can of crushed pineapple including its juice. Stir until the mixture thickens slightly.
- Add marshmallows and pecans: Fold in the mini marshmallows and chopped pecans carefully to distribute evenly throughout the mixture.
- Fold in whipped topping: Gently fold the whipped topping into the pudding mixture until evenly combined and fluffy in texture.
- Chill the salad: Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld and the salad set.
- Garnish and serve: Before serving, garnish with maraschino cherries and additional chopped pecans if desired. Serve chilled in 1/2 cup portions.
Notes
- This classic retro dessert can be made a day ahead and stored in the refrigerator for convenience.
