Ingredients

Scale

Salad Ingredients

  • 1 package (3.4 ounces) instant pistachio pudding mix
  • 1 can (20 ounces) crushed pineapple in juice (undrained)
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans
  • 1 1/2 cups whipped topping (like Cool Whip)

Garnish (Optional)

  • Maraschino cherries
  • Additional chopped pecans

Instructions

  1. Combine pudding and pineapple: In a large mixing bowl, blend the instant pistachio pudding mix with the entire can of crushed pineapple including its juice. Stir until the mixture thickens slightly.
  2. Add marshmallows and pecans: Fold in the mini marshmallows and chopped pecans carefully to distribute evenly throughout the mixture.
  3. Fold in whipped topping: Gently fold the whipped topping into the pudding mixture until evenly combined and fluffy in texture.
  4. Chill the salad: Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld and the salad set.
  5. Garnish and serve: Before serving, garnish with maraschino cherries and additional chopped pecans if desired. Serve chilled in 1/2 cup portions.

Notes

  • This classic retro dessert can be made a day ahead and stored in the refrigerator for convenience.
  • For added texture and flavor, shredded coconut can be mixed in.
  • To make a lighter version, use sugar-free pudding mix and light whipped topping.
