Instructions
- Thinly slice the cucumbers, bell peppers, and red onion, then place them in a large bowl.
- In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, chili flakes (if using), and sugar until combined.
- Pour the dressing over the vegetables and toss until evenly coated.
- Season with salt and pepper to taste.
