- 2 cans (15 oz each) black beans, drained and rinsed
- 1/2 cup breadcrumbs (use gluten-free if needed)
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/2 cup grated carrot
- 1/4 cup chopped fresh cilantro
- 1 tbsp soy sauce
- 1 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper
- Salt to taste
- Oil for cooking
Instructions
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth but with some chunks for texture.
- Add the breadcrumbs, red onion, garlic, grated carrot, cilantro, soy sauce, olive oil, cumin, paprika, black pepper, and salt.
- Mix everything together until well combined. If the mixture feels too wet, add a bit more breadcrumbs.
- Form the mixture into 4-6 patties.
- Heat a bit of oil in a skillet over medium heat.
- Cook the patties for about 4-5 minutes on each side, or until nicely browned and heated through.
- Serve on buns with your favorite toppings like lettuce, tomato, avocado, and vegan mayo.
Notes
- You can freeze uncooked patties for up to 3 months.
- For extra firmness, refrigerate patties for 30 minutes before cooking.
- Try adding corn, bell peppers, or hot sauce for variation.
