Description

Ingredients

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/2 cup grated carrot
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • Salt to taste
  • Oil for cooking

Instructions

  1. In a large bowl, mash the black beans with a fork or potato masher until mostly smooth but with some chunks for texture.
  2. Add the breadcrumbs, red onion, garlic, grated carrot, cilantro, soy sauce, olive oil, cumin, paprika, black pepper, and salt.
  3. Mix everything together until well combined. If the mixture feels too wet, add a bit more breadcrumbs.
  4. Form the mixture into 4-6 patties.
  5. Heat a bit of oil in a skillet over medium heat.
  6. Cook the patties for about 4-5 minutes on each side, or until nicely browned and heated through.
  7. Serve on buns with your favorite toppings like lettuce, tomato, avocado, and vegan mayo.

Notes

  • You can freeze uncooked patties for up to 3 months.
  • For extra firmness, refrigerate patties for 30 minutes before cooking.
  • Try adding corn, bell peppers, or hot sauce for variation.
