Description

These Ultimate Shredded Chicken Tacos are flavorful, juicy, and easy to make, perfect for weeknight dinners or entertaining guests.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup chopped red onion
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • Optional: sour cream, avocado, or salsa for topping

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
  3. Place chicken in the skillet and sear on both sides until golden brown, about 2-3 minutes per side.
  4. Pour in chicken broth, cover, and reduce heat to low. Simmer for 20 minutes or until chicken is fully cooked and tender.
  5. Remove chicken from the skillet and shred using two forks.
  6. Return shredded chicken to the skillet and mix with remaining juices.
  7. Warm tortillas in a dry skillet or microwave.
  8. Assemble tacos by filling each tortilla with shredded chicken, lettuce, tomatoes, red onion, cheese, and cilantro.
  9. Top with lime juice and any desired optional toppings.
  10. Serve immediately and enjoy!

Notes

  • For extra flavor, marinate the chicken with spices ahead of time.
