Description

A healthy and flavorful twist on tacos, these Turkey Taco Stuffed Peppers are loaded with seasoned ground turkey, black beans, corn, and cheese, all baked inside sweet bell peppers.


Ingredients

  • 4 large bell peppers, halved and seeds removed
  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp taco seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic and sauté for 2-3 minutes until softened.
  3. Add ground turkey and cook until browned, breaking it up as it cooks.
  4. Stir in taco seasoning, salt, pepper, black beans, corn, and salsa. Cook for another 2-3 minutes until everything is well combined and heated through.
  5. Place bell pepper halves in a baking dish, cut side up. Spoon the turkey mixture evenly into each pepper.
  6. Top each stuffed pepper with shredded cheddar cheese.
  7. Cover with foil and bake for 30 minutes. Then uncover and bake for an additional 10 minutes until the peppers are tender and cheese is bubbly and melted.
  8. Garnish with fresh cilantro if desired and serve hot.

Notes

  • Use different colored bell peppers for a vibrant presentation.
  • Can be made ahead and reheated for a quick meal.
  • Swap ground turkey with ground chicken or beef if preferred.
  • Serve with avocado or a dollop of sour cream for extra richness.
