- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 pound ground turkey
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (15-ounce) can diced tomatoes
- 1 (15-ounce) can tomato sauce
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup chicken broth
- 1 cup corn kernels (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
- Add garlic and cook for another 1 minute until fragrant.
- Add ground turkey and cook until browned, breaking it apart with a spoon.
- Stir in chili powder, cumin, smoked paprika, cayenne (if using), salt, and pepper. Cook for 2 minutes to toast the spices.
- Add diced tomatoes, tomato sauce, beans, chicken broth, and corn (if using). Stir to combine.
- Bring the chili to a boil, then reduce heat and simmer for 30-40 minutes, stirring occasionally.
- Taste and adjust seasoning if needed. Serve hot with desired toppings like sour cream, cheese, or green onions.
Notes
- For a thicker chili, simmer uncovered.
- Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
- Adjust the spice level by adding more or less cayenne pepper.
