Tortitas de Papa are Mexican-style potato patties that are crispy on the outside and soft inside, perfect as a side dish or light main meal.

- 4 large potatoes, peeled and chopped
- 2 eggs
- 1/2 cup grated cheese (e.g., Cotija or cheddar)
- 1/4 cup chopped fresh parsley or cilantro
- 1/4 cup finely chopped onion
- 1/2 cup breadcrumbs
- Salt to taste
- Black pepper to taste
- Oil for frying
Instructions
- Boil the potatoes in salted water until tender, about 20 minutes.
- Drain and mash the potatoes in a large bowl.
- Add eggs, cheese, parsley or cilantro, onion, salt, and pepper to the mashed potatoes and mix well.
- Shape the mixture into small patties.
- Coat each patty lightly in breadcrumbs.
- Heat oil in a skillet over medium heat.
- Fry the patties in batches until golden brown on both sides, about 3-4 minutes per side.
- Drain on paper towels and serve warm.
Notes
- You can use leftover mashed potatoes to save time.
- Try adding minced garlic or cooked bacon for extra flavor.
- Serve with salsa or sour cream for dipping.
