Description

Tortitas de Papa are Mexican-style potato patties that are crispy on the outside and soft inside, perfect as a side dish or light main meal.


Ingredients

  • 4 large potatoes, peeled and chopped
  • 2 eggs
  • 1/2 cup grated cheese (e.g., Cotija or cheddar)
  • 1/4 cup chopped fresh parsley or cilantro
  • 1/4 cup finely chopped onion
  • 1/2 cup breadcrumbs
  • Salt to taste
  • Black pepper to taste
  • Oil for frying

Instructions

  1. Boil the potatoes in salted water until tender, about 20 minutes.
  2. Drain and mash the potatoes in a large bowl.
  3. Add eggs, cheese, parsley or cilantro, onion, salt, and pepper to the mashed potatoes and mix well.
  4. Shape the mixture into small patties.
  5. Coat each patty lightly in breadcrumbs.
  6. Heat oil in a skillet over medium heat.
  7. Fry the patties in batches until golden brown on both sides, about 3-4 minutes per side.
  8. Drain on paper towels and serve warm.

Notes

  • You can use leftover mashed potatoes to save time.
  • Try adding minced garlic or cooked bacon for extra flavor.
  • Serve with salsa or sour cream for dipping.
