Description

This Tomato Avocado Melt is a deliciously satisfying vegetarian sandwich featuring ripe avocado, juicy tomato slices, and sharp cheddar cheese melted between crispy sourdough or whole grain bread. Perfect for a quick lunch or easy dinner, it combines fresh flavors with a golden, buttery crust cooked on the stovetop.

Ingredients

Scale

Bread and Oil

  • 2 slices sourdough or whole grain bread
  • 1 tablespoon olive oil or softened butter

Filling

  • 1 ripe avocado, sliced
  • 1 medium tomato, sliced
  • 2 slices sharp cheddar cheese (or Monterey Jack)
  • Salt and black pepper to taste
  • 1/4 teaspoon garlic powder (optional)
  • Fresh basil leaves (optional)

Instructions

  1. Preheat Skillet: Preheat a skillet or griddle over medium heat to prepare for toasting the sandwich evenly without burning.
  2. Prepare Bread: Lightly brush one side of each slice of bread with olive oil or spread with softened butter to achieve a golden, crispy crust during cooking.
  3. Assemble Sandwich: Place one slice of bread, oiled side down, on the skillet. Layer with the cheese slices, avocado slices, and tomato slices. Season with salt, black pepper, and garlic powder if using. Add fresh basil leaves if desired for an herbal note.
  4. Top and Cook: Place the second slice of bread on top, oiled side facing up. Cook for 3–4 minutes per side, pressing down gently with a spatula to ensure the sandwich compresses and all ingredients warm through evenly. The bread should be golden brown and the cheese melted.
  5. Serve: Remove the sandwich from the skillet, slice it in half, and serve warm for the best taste and texture.

Notes

  • Slice the avocado right before assembling to prevent browning.
  • For extra richness, spread a thin layer of mayonnaise or pesto inside the sandwich before grilling.
  • This sandwich can also be prepared open-faced by placing under a broiler for a quick melt.
