Vegetables
- 500g broccoli (florets and chopped stalks)
- 1 onion or shallot, chopped
- 1 leek (optional), sliced and rinsed
- 2 cloves garlic, minced
- 1 medium potato, peeled and diced

- 150g Stilton cheese, crumbled
- 2 tbsp butter or olive oil
- 100ml cream or milk
Liquids and Seasoning
- 1 liter vegetable or chicken stock
- Salt and pepper to taste
Instructions
- Prepare the Vegetables: Wash and chop the broccoli into florets and chop the stalks as well. Chop the onion or shallot, slice and rinse the leek to ensure it’s clean, mince the garlic, and peel and dice the potato.
- Sauté Aromatics: In a large saucepan, melt the butter or heat olive oil over medium heat. Add the chopped onion, leek, and minced garlic. Cook for about 5 minutes until the vegetables are softened and fragrant.
- Add Vegetables: Add the diced potato and the chopped broccoli stalks to the saucepan. Stir well and cook for another 2 to 3 minutes to start softening the vegetables.
- Simmer in Stock: Pour in the vegetable or chicken stock and bring the mixture to a gentle simmer. Allow it to cook uncovered for 15 to 20 minutes, or until all the vegetables are tender.
- Blend the Soup: Use an immersion blender directly in the pot, or transfer the soup to a countertop blender in batches, to puree the soup until it reaches a smooth and creamy consistency.
- Finish with Cheese and Cream: Stir in the cream or milk to add richness, then fold in the crumbled Stilton cheese. Heat the soup gently over low heat, stirring occasionally until the cheese has fully melted into the soup.
- Season and Serve: Taste the soup and season with salt and freshly ground black pepper as needed. Serve the soup hot, perfect for a warming meal.

- For a thinner soup, add additional stock or milk to reach your desired consistency.
- You can substitute Stilton with other blue cheeses if preferred, but Stilton provides a distinctive flavor.
