  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 2 1/2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (15-ounce) can tomato sauce
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 cup beef broth

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until softened, about 5 minutes.
  3. Stir in garlic and cook for another 1 minute.
  4. Add ground beef and cook until browned, breaking it up with a spoon.
  5. Stir in chili powder, cumin, paprika, cayenne, oregano, salt, and black pepper. Cook for 1 minute to toast the spices.
  6. Add tomato sauce, diced tomatoes, kidney beans, pinto beans, and beef broth. Stir to combine.
  7. Bring to a boil, then reduce heat to low and simmer uncovered for 30–45 minutes, stirring occasionally.
  8. Taste and adjust seasonings if necessary. Serve hot with your favorite toppings.

Notes

  • For a thicker chili, simmer longer or mash some of the beans.
  • Top with shredded cheese, sour cream, or chopped green onions for extra flavor.
  • Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
