Scale
- 1 lb boneless, skinless chicken thighs or breasts
- 1/4 cup soy sauce
- 1/4 cup mirin (sweet rice wine)
- 2 tbsp sake (or water if unavailable)
- 2 tbsp brown sugar
- 1 tbsp vegetable oil
- 1 tsp grated ginger
- 1 tsp minced garlic
- 1 tbsp cornstarch (optional, for thickening)
- 1 tbsp water (for cornstarch slurry)
- Chopped green onions, for garnish
- Sesame seeds, for garnish
Instructions
- In a bowl, mix soy sauce, mirin, sake, brown sugar, ginger, and garlic to make the teriyaki sauce.
- Heat oil in a skillet over medium heat. Add chicken and cook until browned on both sides and cooked through, about 6-7 minutes per side.
- Pour the teriyaki sauce over the chicken and let it simmer for 5-7 minutes, turning the chicken occasionally until the sauce thickens slightly.
- If a thicker sauce is desired, mix cornstarch and water to make a slurry and stir it into the pan. Cook until the sauce thickens.
- Remove from heat, slice chicken, and drizzle with remaining sauce.
- Garnish with chopped green onions and sesame seeds before serving.
Notes
- Use low-sodium soy sauce to reduce salt content.
- Marinate the chicken in the sauce for extra flavor before cooking.
- This dish pairs well with steamed rice and vegetables.
