Description

Tasty Cauliflower Hashbrowns are a healthy and delicious low-carb alternative to traditional hashbrowns, made with grated cauliflower, cheese, and herbs, perfect for breakfast or a light snack.


Ingredients

  • 2 cups grated cauliflower
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded cheddar cheese
  • 1 large egg
  • 1/4 cup chopped green onions
  • 2 tablespoons all-purpose flour (or almond flour for low-carb)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil for frying

Instructions

  1. Grate the cauliflower and place it in a clean kitchen towel. Squeeze out as much moisture as possible.
  2. In a large bowl, combine the grated cauliflower, Parmesan, cheddar cheese, egg, green onions, flour, garlic powder, pepper, and salt. Mix well.
  3. Form the mixture into small patties using your hands.
  4. Heat olive oil in a nonstick skillet over medium heat.
  5. Place the patties in the skillet and cook for 3–4 minutes on each side until golden brown and crispy.
  6. Transfer to a paper towel-lined plate to drain excess oil.
  7. Serve hot with your favorite dipping sauce or as a side dish.
