- 2 cups grated cauliflower
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded cheddar cheese
- 1 large egg
- 1/4 cup chopped green onions
- 2 tablespoons all-purpose flour (or almond flour for low-carb)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons olive oil for frying
Instructions
- Grate the cauliflower and place it in a clean kitchen towel. Squeeze out as much moisture as possible.
- In a large bowl, combine the grated cauliflower, Parmesan, cheddar cheese, egg, green onions, flour, garlic powder, pepper, and salt. Mix well.
- Form the mixture into small patties using your hands.
- Heat olive oil in a nonstick skillet over medium heat.
- Place the patties in the skillet and cook for 3–4 minutes on each side until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve hot with your favorite dipping sauce or as a side dish.
Notes
- Use a food processor for faster cauliflower grating.
- Ensure all moisture is squeezed from the cauliflower to avoid soggy hashbrowns.
- Almond flour can be used for a gluten-free version.
- Add a pinch of chili flakes for a spicy kick.
