Description

Ingredients

  • 8 oz spaghetti
  • 1 lb ground beef
  • 1 packet taco seasoning (1 oz)
  • 1/2 cup water
  • 1 can diced tomatoes with green chilies (10 oz, undrained)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped cilantro, jalapeƱos

Instructions

  1. Cook the spaghetti according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 3 minutes.
  3. Add garlic and cook for 1 more minute.
  4. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  5. Stir in taco seasoning and water. Simmer for 2-3 minutes until thickened.
  6. Add diced tomatoes with green chilies and bring to a simmer.
  7. Stir in cooked spaghetti and mix well to coat.
  8. Top with shredded cheddar and Monterey Jack cheese. Cover and let sit for 2-3 minutes until cheese melts.
  9. Serve hot with optional toppings if desired.
