These Sweet and Spicy Grilled Chicken and Pineapple Skewers are a perfect summer dish, combining tender marinated chicken with juicy pineapple and a flavorful glaze.

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 cups fresh pineapple chunks
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp sriracha sauce
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1/2 tsp black pepper
- 1/4 tsp salt
- Wooden or metal skewers
Instructions
- Soak wooden skewers in water for at least 30 minutes if using.
- In a bowl, whisk together soy sauce, honey, sriracha, olive oil, garlic, ginger, pepper, and salt to make the marinade.
- Add chicken cubes to the marinade and refrigerate for at least 1 hour.
- Preheat grill to medium-high heat.
- Thread marinated chicken and pineapple chunks alternately onto the skewers.
- Grill skewers for 10-12 minutes, turning occasionally and basting with remaining marinade, until chicken is cooked through and slightly charred.
- Remove from grill and let rest for a few minutes before serving.
Notes
- Adjust the level of sriracha to suit your spice preference.
- For extra flavor, marinate overnight.
- Can be served with rice or salad for a complete meal.
