Description

These Sweet and Spicy Grilled Chicken and Pineapple Skewers are a perfect summer dish, combining tender marinated chicken with juicy pineapple and a flavorful glaze.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 cups fresh pineapple chunks
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp sriracha sauce
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • Wooden or metal skewers

Instructions

  1. Soak wooden skewers in water for at least 30 minutes if using.
  2. In a bowl, whisk together soy sauce, honey, sriracha, olive oil, garlic, ginger, pepper, and salt to make the marinade.
  3. Add chicken cubes to the marinade and refrigerate for at least 1 hour.
  4. Preheat grill to medium-high heat.
  5. Thread marinated chicken and pineapple chunks alternately onto the skewers.
  6. Grill skewers for 10-12 minutes, turning occasionally and basting with remaining marinade, until chicken is cooked through and slightly charred.
  7. Remove from grill and let rest for a few minutes before serving.

Notes

  • Adjust the level of sriracha to suit your spice preference.
  • For extra flavor, marinate overnight.
