Description

This Sweet Alabama Pecan Bread is a moist, flavorful quick bread packed with rich brown sugar and chopped pecans, topped with whole pecans for an added crunch. Perfect for breakfast, snacks, or dessert, baked to a golden perfection and enjoyed warm or at room temperature.

Ingredients

Scale

Wet Ingredients

  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Nuts

  • 1 cup chopped pecans
  • ½ cup whole pecans (for topping, optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper to prevent sticking.
  2. Mix Sugars & Oil: In a large bowl, whisk together the brown sugar, granulated sugar, and vegetable oil until the mixture is smooth and well combined.
  3. Add Eggs & Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next, then mix in the vanilla extract for flavor.
  4. Prepare Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt to ensure even distribution of the leavening agent and seasoning.
  5. Combine Wet & Dry: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined to avoid overmixing which can make the bread tough.
  6. Fold in Pecans: Gently fold the chopped pecans into the batter to evenly distribute the nuts throughout the bread.
  7. Pour & Decorate: Pour the batter into the prepared baking dish and smooth the top with a spatula. Arrange the whole pecans on top for a decorative and crunchy finish, if desired.
  8. Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the bread comes out clean, indicating it is fully cooked.
  9. Cool & Serve: Remove the bread from the oven and allow it to cool in the baking dish before slicing into squares. Serve warm or at room temperature for best taste.

Notes

  • Make sure not to overmix the batter to keep the bread tender.
  • Use parchment paper for easy removal of the bread from the pan.
  • Whole pecans on top add a nice crunch but can be omitted if preferred.
  • Store leftover bread in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
  • Perfect accompaniment to coffee or tea.
