Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper to prevent sticking.
- Mix Sugars & Oil: In a large bowl, whisk together the brown sugar, granulated sugar, and vegetable oil until the mixture is smooth and well combined.
- Add Eggs & Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next, then mix in the vanilla extract for flavor.
- Prepare Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt to ensure even distribution of the leavening agent and seasoning.
- Combine Wet & Dry: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined to avoid overmixing which can make the bread tough.
- Fold in Pecans: Gently fold the chopped pecans into the batter to evenly distribute the nuts throughout the bread.
- Pour & Decorate: Pour the batter into the prepared baking dish and smooth the top with a spatula. Arrange the whole pecans on top for a decorative and crunchy finish, if desired.
- Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the bread comes out clean, indicating it is fully cooked.
