Ingredients
Scale
Fruit
- 6 ripe peaches, pitted and sliced
- 1 pint fresh blueberries
- 1 pint fresh raspberries
Herbs & Dressing
- 1/2 cup fresh mint leaves, chopped
- 1/4 cup honey
- 2 tablespoons lime juice, freshly squeezed
- 1/4 cup orange juice, freshly squeezed
- 1 teaspoon lime zest
Toppings (Optional)
- 1/4 cup slivered almonds, toasted
- 1/4 cup crumbled feta cheese
Instructions
- Prepare the Peaches: Wash the peaches thoroughly, then cut around the seam and twist to separate into halves. Remove the pits and slice the peaches into 1/2 inch thick wedges. Place all sliced peaches into a large mixing bowl.
- Add the Berries: Gently rinse the blueberries and raspberries under cold water to clean them without bruising. Add these berries to the bowl containing the sliced peaches.
- Chop the Mint: Rinse and dry fresh mint leaves. Stack several leaves, roll them tightly, and slice thinly using the chiffonade technique to create fine strips. Add the chopped mint to the fruit mixture.
- Combine the Liquids: In a small bowl, whisk together the honey, freshly squeezed lime juice, and freshly squeezed orange juice until the mixture is smooth and well combined.
- Add the Lime Zest: Grate the lime zest carefully into the dressing bowl, ensuring you avoid the white pith beneath the green skin which can impart bitterness.
- Whisk Thoroughly: Whisk the dressing once more until all ingredients are evenly blended and the dressing is smooth and cohesive.
- Pour the Dressing: Pour the prepared honey-lime dressing evenly over the mixed fruit in the large mixing bowl.
- Gently Toss: Using a large spoon or spatula, gently toss the fruit and dressing together until all pieces are coated without bruising the berries or peaches.
- Chill (Optional): Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill, enhancing taste and texture.
- Add Toppings (Optional): Just before serving, sprinkle toasted slivered almonds and crumbled feta cheese on top of the salad to add a crunchy and creamy element for contrast.
Notes
- Use ripe, firm peaches for the best texture and sweetness.
- Chill the salad in the refrigerator for at least 30 minutes before serving to deepen the flavor.
- The toasted almonds and crumbled feta cheese are optional but add a nice contrast; omit for a vegan version.
- Be gentle when tossing to prevent the berries from breaking apart.
