For the crust:
- 2 cups Golden Oreos (crushed)
- ¼ cup unsalted butter (melted)
For the cheesecake filling:
- 3 packages (8 oz each) cream cheese (softened)
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- ½ cup sour cream
- 1 cup finely chopped fresh strawberries
For the topping:
- 1 ½ cups heavy whipping cream

- 1 teaspoon vanilla extract
For the strawberry shortcake crumble:
- 12 Golden Oreos
- 2 tablespoons freeze-dried strawberries
- 2 tablespoons unsalted butter (melted)
Instructions
- Preheat and prepare pan: Preheat the oven to 325°F (160°C). Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides to prevent sticking.
- Prepare crust: In a medium bowl, mix crushed Golden Oreos and melted butter until the mixture resembles wet sand. Press this firmly into the bottom of the prepared pan to form an even crust. Bake in the preheated oven for 10 minutes, then remove and let cool.
- Make cheesecake filling: In a large bowl, beat softened cream cheese until smooth. Add granulated sugar and vanilla extract; mix until fully combined. Add eggs one at a time, beating on low speed just until blended. Mix in sour cream and gently fold in the finely chopped strawberries to evenly distribute.
- Bake cheesecake: Pour the cheesecake batter over the cooled crust and tap the pan gently to eliminate air bubbles. Bake for 50 to 60 minutes or until the center is set but still slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour, then refrigerate for at least 4 hours or overnight to firm up.
- Prepare topping: Whip heavy cream with powdered sugar and vanilla extract until stiff peaks form. Spread this evenly over the chilled cheesecake surface.
- Make and add crumble: Using a food processor, pulse Golden Oreos and freeze-dried strawberries until crumbly. Stir in melted butter to combine. Generously sprinkle this crumble over the whipped cream topping for texture and flavor contrast.
- Serve: Slice the cheesecake and serve chilled for a refreshing and indulgent dessert experience.
