- 8 cups plain popped popcorn
- 1/2 cup freeze-dried strawberries, crushed
- 1/2 cup granulated sugar
- 1/4 cup light corn syrup
- 1/4 cup unsalted butter
- 1 package (3 oz) strawberry-flavored gelatin
- 1/4 tsp salt
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.
- Place the popped popcorn in a large bowl and remove any unpopped kernels.
- In a saucepan over medium heat, combine sugar, corn syrup, butter, and salt. Stir continuously until the mixture comes to a boil.
- Remove from heat and stir in the strawberry gelatin and vanilla extract until dissolved.
- Quickly pour the mixture over the popcorn and stir to coat evenly.
- Spread the coated popcorn onto the prepared baking sheet in an even layer.
- Bake for 30 minutes, stirring every 10 minutes to prevent clumping.
- Remove from oven and sprinkle crushed freeze-dried strawberries over the popcorn while it’s still warm.
- Let cool completely before serving or storing.
Notes
- You can use strawberry extract for a stronger flavor if desired.
- Store in an airtight container for up to 1 week.
- Try drizzling with white chocolate for an extra treat.
