Instructions

  1. Prepare the Dough: In a large bowl, mix together the flour and granulated sugar. Cut in the cold butter using a pastry cutter or your fingers until the mixture looks like coarse crumbs. Stir in the cold water and vanilla extract until the dough just comes together. Wrap the dough tightly in plastic wrap and refrigerate for at least 30 minutes to firm up.
  2. Roll and Cut: Preheat the oven to 400°F (200°C). On a floured surface, roll out the chilled dough to about ¼-inch thickness. Using a knife or cookie cutter, cut the dough into rectangles measuring approximately 3 by 4 inches.
  3. Fill and Seal: Place a heaping spoonful of strawberry preserves onto half of the dough rectangles, leaving a small border around the edges. Top each with a remaining rectangle and press edges firmly to seal. Use a fork to crimp the edges, ensuring the filling is sealed inside.
  4. Bake: Arrange the filled pop-tarts on a baking sheet lined with parchment paper. Bake in the preheated oven for 15 minutes or until they turn golden brown. Remove from oven and let cool completely on a wire rack.
