- 3 tbsp water
- 1 cup heavy whipping cream

Instructions
- In a blender, puree the strawberries with sugar and lemon juice until smooth.
- In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom.
- Heat the gelatin mixture gently until fully dissolved, then stir it into the strawberry puree.
- In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
- Gently fold the strawberry mixture into the whipped cream until well combined.
- Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours or until set.
- Garnish with fresh strawberries or mint leaves before serving, if desired.
