Description

A refreshing, colorful salad combining sweet strawberries, creamy avocado, and crisp corn. This simple yet vibrant dish is perfect as a side or light meal, especially for warm weather.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 1 ripe avocado, diced

  • 1/4 cup red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • 2 tablespoons lime juice

  • 1 tablespoon olive oil

 

  • Salt and pepper, to taste


Instructions

  • In a large bowl, combine the sliced strawberries, corn kernels, diced avocado, chopped red onion, and cilantro.

  • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.

  • Pour the dressing over the salad and gently toss everything together to coat.

 

  • Serve immediately or chill for 15 minutes for extra freshness.


Notes

  • For extra crunch, add a handful of crushed tortilla chips on top just before serving.

 

  • If using frozen corn, be sure to thaw it before adding to the salad.
