Beef Marinade

- 1 cup Chinese yam, peeled and thinly sliced

- 1 teaspoon Shaoxing wine (optional)

Instructions
- Marinate the Beef: In a bowl, toss the thinly sliced beef sirloin or flank steak with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and 1 teaspoon sesame oil. Mix well and let it marinate for 15 minutes to tenderize and infuse flavor.
- Heat the Pan and Cook Beef: Heat 1 tablespoon vegetable oil in a wok or large skillet over medium-high heat. Add the marinated beef and stir-fry for 1–2 minutes until just browned but not fully cooked. Remove the beef from the pan and set aside to rest.
- Stir-Fry Vegetables: In the same pan, add a little more oil if necessary. Add the sliced Chinese yam, julienned carrots, and sliced red bell pepper. Stir-fry for about 2–3 minutes until the vegetables are just tender but still crisp.
- Add Garlic: Add the minced garlic to the vegetables and stir-fry for an additional 30 seconds to release its aroma and flavor.
- Combine and Season: Return the browned beef to the pan with the vegetables. Add 1 tablespoon oyster sauce, 1 tablespoon light soy sauce, 1 teaspoon Shaoxing wine (if using), and 1/4 teaspoon white pepper. Stir everything together thoroughly and cook for another 1–2 minutes until the beef is cooked through and all ingredients are well coated with sauce.
- Garnish and Serve: Remove from heat, garnish with chopped green onions, and serve hot alongside steamed rice for a complete meal.
