Description

Golden and crispy squash croquettes made with mashed squash, herbs, and cheese – perfect as a snack or appetizer.


Ingredients

  • 2 cups cooked and mashed squash (butternut or yellow)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (plus extra for coating)
  • 1 egg
  • 1/4 cup chopped green onions
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, mix the mashed squash, Parmesan cheese, breadcrumbs, egg, green onions, garlic powder, salt, and pepper.
  2. Shape the mixture into small croquettes or patties.
  3. Roll each croquette in extra breadcrumbs to coat.
  4. Heat oil in a frying pan over medium heat.
  5. Fry croquettes in batches until golden brown and crispy on all sides, about 2-3 minutes per side.
  6. Drain on paper towels and serve warm.

Notes

  • Use well-drained squash to avoid soggy croquettes.
  • Can be baked at 400°F (200°C) for a healthier version.
  • Add herbs like parsley or thyme for extra flavor.
