- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (plus extra for coating)
- 1 egg
- 1/4 cup chopped green onions
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, mix the mashed squash, Parmesan cheese, breadcrumbs, egg, green onions, garlic powder, salt, and pepper.
- Shape the mixture into small croquettes or patties.
- Roll each croquette in extra breadcrumbs to coat.
- Heat oil in a frying pan over medium heat.
- Fry croquettes in batches until golden brown and crispy on all sides, about 2-3 minutes per side.
- Drain on paper towels and serve warm.
Notes
- Use well-drained squash to avoid soggy croquettes.
- Can be baked at 400°F (200°C) for a healthier version.
- Add herbs like parsley or thyme for extra flavor.
