Description

A hearty and comforting soup made from dried split peas, vegetables, and flavorful seasonings, perfect for a nutritious meal.


Ingredients

  • 2 cups dried green split peas, rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bay leaf
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: diced ham or smoked turkey (for non-vegetarian version)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, garlic, carrots, and celery. Cook until vegetables are softened, about 5 minutes.
  3. Add split peas, bay leaf, thyme, and vegetable broth to the pot. Stir well.
  4. Bring to a boil, then reduce heat and simmer uncovered for about 60-75 minutes, stirring occasionally, until peas are soft and soup is thickened.
  5. Remove the bay leaf. For a smoother texture, blend part or all of the soup using an immersion blender.
  6. Season with salt and pepper to taste. Add diced ham or smoked turkey if desired.
  7. Serve hot with crusty bread.

Notes

  • Soup thickens as it cools; add water or broth when reheating if needed.
  • For a vegan version, omit the ham or smoked turkey.
  • Store in the fridge for up to 5 days or freeze for up to 3 months.
