Description

Dairy & Cheese

  • 16 oz Velveeta cheese, cubed
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1/2 cup milk

Canned Goods

  • 1 (10 oz) can diced tomatoes with green chiles, undrained

Spices & Seasonings

  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Cook the Meats: In a large skillet over medium heat, brown the ground beef and chorizo until fully cooked, about 8 minutes. Then drain the excess grease to prevent the queso from becoming too oily.
  2. Sauté the Vegetables: Add the finely chopped onion, diced red bell pepper, and seeded, finely chopped jalapeños to the skillet. Cook for 5 minutes until the vegetables have softened and released their flavors.
  3. Combine Cheeses and Tomatoes: Reduce the heat to low and add the cubed Velveeta, shredded sharp cheddar, shredded Monterey Jack, the can of diced tomatoes with green chiles (including the liquid), and milk to the skillet. Stir continuously to melt the cheeses evenly and create a smooth, creamy mixture.
  4. Season the Queso: Sprinkle in cumin, salt, and pepper to taste, stirring well to blend the spices throughout the queso dip.
  5. Add Fresh Cilantro: Just before serving, stir in the chopped fresh cilantro for a bright, fresh flavor that complements the spicy, cheesy base.
