- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon chili garlic sauce (adjust to taste)
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon rice vinegar or white vinegar
- Chopped chives or green onions, for garnish
- Smoked paprika, for garnish (optional)
Instructions
- Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat, then cover, remove from heat, and let sit for 10-12 minutes.
- Drain and cool the eggs under cold running water or in an ice bath. Peel the eggs once cool.
- Slice the eggs in half lengthwise and remove the yolks to a bowl. Mash the yolks with a fork.
- Add mayonnaise, Dijon mustard, chili garlic sauce, vinegar, salt, and pepper to the mashed yolks. Mix until smooth and creamy.
- Spoon or pipe the filling into the egg white halves.
- Garnish with chopped chives or green onions and a sprinkle of smoked paprika, if desired.
- Chill until ready to serve.
Notes
- Adjust the chili garlic sauce to control the spice level.
- For extra creaminess, add a splash of cream or a bit more mayo.
- These can be made a day ahead and stored in the fridge.
