- 1 head cauliflower, cut into florets
- 1/2 cup all-purpose flour
- 1/2 cup water
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1 tbsp olive oil
- 1/2 cup buffalo sauce
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped red onion
- 1/4 cup crumbled feta or blue cheese (optional)
- 1/4 cup ranch or blue cheese dressing
- Fresh cilantro, chopped (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, water, garlic powder, paprika, and salt to make a batter.
- Add cauliflower florets to the batter, tossing to coat evenly.
- Spread the coated cauliflower on the prepared baking sheet and bake for 20 minutes.
- Remove from oven, drizzle with olive oil and buffalo sauce, toss to coat, and return to oven for an additional 15 minutes until crispy.
- Warm tortillas in a pan or microwave.
- Fill each tortilla with buffalo cauliflower, lettuce, tomatoes, onion, cheese (if using), and dressing.
- Garnish with chopped cilantro if desired, and serve immediately.
