Description

These Spicy Buffalo Cauliflower Tacos are a delicious vegetarian twist on the classic buffalo flavor, wrapped in warm tortillas with fresh toppings and a creamy dressing.


Ingredients

  • 1 head cauliflower, cut into florets
  • 1/2 cup all-purpose flour
  • 1/2 cup water
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1/2 cup buffalo sauce
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled feta or blue cheese (optional)
  • 1/4 cup ranch or blue cheese dressing
  • Fresh cilantro, chopped (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, water, garlic powder, paprika, and salt to make a batter.
  3. Add cauliflower florets to the batter, tossing to coat evenly.
  4. Spread the coated cauliflower on the prepared baking sheet and bake for 20 minutes.
  5. Remove from oven, drizzle with olive oil and buffalo sauce, toss to coat, and return to oven for an additional 15 minutes until crispy.
  6. Warm tortillas in a pan or microwave.
  7. Fill each tortilla with buffalo cauliflower, lettuce, tomatoes, onion, cheese (if using), and dressing.
  8. Garnish with chopped cilantro if desired, and serve immediately.
