Description
Special K Bars are chewy, peanut buttery dessert bars topped with a rich chocolate butterscotch layer. They’re no-bake and easy to make, perfect for potlucks and quick treats.

- 6 cups Special K cereal
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
Instructions
- Grease a 9×13 inch pan and set aside.
- In a large saucepan, combine the sugar and corn syrup. Cook over medium heat until the mixture begins to boil, stirring frequently.
- Remove from heat and stir in the peanut butter until smooth.
- Add the Special K cereal and mix until fully coated.
- Press the cereal mixture evenly into the prepared pan.
- In a microwave-safe bowl, melt the chocolate chips and butterscotch chips together in 30-second intervals, stirring until smooth.
- Pour the melted chocolate mixture over the bars and spread evenly.
- Let bars cool at room temperature until set, or refrigerate to speed up the process.
- Cut into squares and serve.
Notes
- Do not boil the sugar mixture too long, or the bars may become too hard.
- Use parchment paper to press down the mixture easily without sticking.
- Store in an airtight container for up to a week.
