A refreshing and tangy twist on the classic margarita, this Sparkling Rhubarb Margarita combines the tartness of rhubarb with the effervescence of sparkling water for a vibrant summer cocktail.

- 1 cup chopped rhubarb
- 1/2 cup water
- 1/4 cup sugar
- 2 oz tequila
- 1 oz triple sec
- 1 oz fresh lime juice
- 2 oz rhubarb syrup (from above)
- 2 oz sparkling water
- Ice cubes
- Lime wedge and salt (for rimming the glass)
- Fresh rhubarb or lime slices (for garnish)
Instructions
- In a small saucepan, combine chopped rhubarb, water, and sugar. Bring to a simmer over medium heat and cook for about 10 minutes until rhubarb is soft.
- Strain the mixture through a fine mesh sieve to collect the syrup. Let cool.
- Rim your glass with a lime wedge and dip in salt (optional).
- In a shaker filled with ice, combine tequila, triple sec, lime juice, and rhubarb syrup. Shake well.
- Strain into a glass filled with ice.
- Top with sparkling water and gently stir.
- Garnish with fresh rhubarb or lime slices. Serve immediately.
Notes
- Use pink rhubarb for a brighter, more colorful syrup.
- Adjust the sugar in the syrup to your taste preference.
- You can prepare the rhubarb syrup in advance and store in the refrigerator for up to a week.
