Description

Delicious and easy Southwest Cream Cheese Chicken Wraps packed with flavor, perfect for a quick lunch or dinner.


Ingredients

  • 2 cups cooked shredded chicken
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup canned corn, drained
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green onions
  • 1 tablespoon taco seasoning
  • 4 large flour tortillas
  • 2 tablespoons olive oil (for grilling wraps)

Instructions

  1. In a large bowl, mix together the shredded chicken, cream cheese, cheddar cheese, corn, black beans, red bell pepper, green onions, and taco seasoning until well combined.
  2. Lay out the tortillas and divide the filling evenly among them.
  3. Fold in the sides of each tortilla and roll tightly into a wrap.
  4. Heat olive oil in a skillet over medium heat.
  5. Place wraps seam-side down in the skillet and cook for 2-3 minutes per side or until golden brown and heated through.
  6. Remove from skillet, slice in half if desired, and serve warm.

Notes

  • Use rotisserie chicken for a quicker preparation.
  • Add jalapeƱos for extra heat if desired.
  • Wraps can be made ahead and grilled just before serving.
