- 1 tbsp olive oil
- 1 lb smoked sausage, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium sweet potatoes, peeled and diced
- 6 cups chicken broth
- 1 bunch kale, stems removed and chopped
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned, about 5 minutes. Remove and set aside.
- In the same pot, add the diced onion and cook until soft, about 3 minutes. Add garlic and cook for another minute.
- Add sweet potatoes, smoked paprika, thyme, and chicken broth. Bring to a boil.
- Reduce heat and simmer for about 15 minutes, or until sweet potatoes are tender.
- Return sausage to the pot and add chopped kale. Simmer for an additional 5-7 minutes until kale is wilted and tender.
- Season with salt and pepper to taste. Serve hot.
Notes
- For a spicier version, use hot smoked sausage.
- Can be made ahead and stored in the fridge for up to 3 days.
- Vegetarian option: Substitute sausage with smoked tofu and use vegetable broth.
