Description

A hearty, flavorful soup packed with smokey sausage, tender sweet potatoes, and nutrient-rich kale. Perfect for a comforting, nutritious meal.


Ingredients

  • 1 tbsp olive oil
  • 1 lb smoked sausage, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced
  • 6 cups chicken broth
  • 1 bunch kale, stems removed and chopped
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned, about 5 minutes. Remove and set aside.
  2. In the same pot, add the diced onion and cook until soft, about 3 minutes. Add garlic and cook for another minute.
  3. Add sweet potatoes, smoked paprika, thyme, and chicken broth. Bring to a boil.
  4. Reduce heat and simmer for about 15 minutes, or until sweet potatoes are tender.
  5. Return sausage to the pot and add chopped kale. Simmer for an additional 5-7 minutes until kale is wilted and tender.
  6. Season with salt and pepper to taste. Serve hot.

Notes

  • For a spicier version, use hot smoked sausage.
  • Can be made ahead and stored in the fridge for up to 3 days.
  • Vegetarian option: Substitute sausage with smoked tofu and use vegetable broth.
